In collaboration with Michelin-starred chef Vikas Khanna, multi award-winning Indian restaurant in JA Lake View Hotel at JA The Resort Dubai introduces a new menu focusing on winter flavours and seasonal produce
To complement the many fan-favourite dishes at acclaimed Indian restaurant Kinara by Vikas Khanna, the creative culinary team are kicking off 2022 with a new menu focusing on seasonal winter ingredients like rainbow carrots, puffed lotus seeds, squash and heirloom tomatoes. With each dish telling a story, Michelin-starred chef Vikas Khanna evokes a ‘journey of the senses and an explosion of flavours’ in the multi award-winning restaurant at JA The Resort Dubai.
Featuring authentic regional dishes with a modern twist, the menu highlights classic dishes, with a strong focus on the subtle smoky flavours of the Tandoori oven and the variety of spices for which India is renowned. Led by Vikas Khanna’s protégé in Dubai, Head Chef Ashish Kumar, the new menu includes main dishes such as Seafood Treasure, a feast of mixed seafood with lobster tail and silken squid, Mushroom Pepper Roast – a melange of different wild mushrooms, and Lamb Shank Curry – a hearty dish perfect for a wintery evening.
New starters predicted to be big hits include the Potato & Cashew Pockets with carom seeds, spiced potatoes and mint sauce, the Tangdi Kebab of chargrilled chicken drumsticks with tender greens, mint chutney and pink radish, or the Ghee Roast Octopus with tamarind-jaggery sauce, smoked paprika, labneh and curry leaves. For something sweet, Rose Kulfi, a delectable dish bursting with aromatic and subtle flavours of rose is the perfect ending to the meal.
The new dishes available at Kinara by Vikas Khanna will complement some of the longstanding guest favourites, such as Kurkuri Dahi -yogurt kebab made with kunafe, Podi Crusted Scallops with celeriac cream, floral infusions and a nutty crust and Shakarkandi ki Chaat, the famous sandalwood smoked sweet potato with cumin labneh and strawberry-ginger dressing.
With an exciting choice of irresistable vegetarian and vegan dishes, diners can try everything at once, as dishes are served in a decadent sharing concept for everyone to enjoy and take their tastebuds on an culinary journey.
